Job Description:

A Sushi Chef is a skilled culinary professional who specializes in the art of preparing sushi and other Japanese delicacies. They possess extensive knowledge of sushi ingredients, techniques, and presentation, and are responsible for creating high-quality sushi dishes that meet customer expectations. The role requires precision, creativity, and a deep understanding of Japanese cuisine.

Responsibilities:

  1. Sushi Preparation: The Sushi Chef is responsible for preparing various types of sushi, including nigiri, maki, sashimi, and specialty rolls. They carefully select and handle ingredients such as fresh fish, seafood, vegetables, rice, and nori (seaweed). They skilfully slice, shape, and assemble the sushi using traditional techniques.
  2. Ingredient Selection: The Sushi Chef ensures the quality and freshness of ingredients. They have a discerning eye for selecting the best fish and seafood, and they may establish relationships with suppliers to ensure a consistent supply of high-quality ingredients.
  3. Menu Development: Some Sushi Chefs contribute to menu planning and development. They may create new sushi dishes, experiment with flavour combinations, and introduce innovative sushi creations to attract and delight customers.
  4. Food Safety and Sanitation: Sushi Chefs adhere to strict food safety and sanitation standards to maintain a clean and hygienic kitchen. They follow proper handling, storage, and cooking techniques to prevent contamination and ensure the safety of customers.
  5. Knife Skills: Sushi Chefs possess exceptional knife skills and precision. They are proficient in slicing fish and other ingredients with accuracy, ensuring consistent shapes and sizes for each sushi piece.
  6. Sushi Bar Presentation: Sushi Chefs often work at an open sushi bar where customers can observe the preparation process. They take pride in presenting sushi in an appealing and visually pleasing manner, paying attention to artistic details and garnishes.

Qualifications

  • A minimum of 8 year(s) of working experience is required.
  • No minimum educational attainment is required for this position.
  • 8+ years experience in prestigious hotels/restaurants
  • 3 years as Japanese cuisine specialist
  • Solid hygiene knowledge in HACCP
  • Excellent people management skills
  • Good communication skills in English
